Lunchbox recipes are always the hardest to come up with. For kids as well as for adults, an exciting lunch box dish can be an extra source of joy! My little one is quite particular about his lunch box. He usually prefers parathas, dosa or sandwiches.
So, for and because of my son, I always end up trying out a variety of parathas that give me enough options to load it up with nutrients!
Once such trial was the Tofu Paratha 🙂

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes – about 12-15 thin parathas
INGREDIENTS:
Wheat Flour – 1 to 1.5 cups
Soft Tofu – 7 OZ
Shredded Carrot – 1/2 cup
Coriander Leaves – few
Red Chilli Powder – 1 Tsp
Ajwain Seeds – 1 Tsp
Salt – as per taste
Oil – 1 Tbsp
METHOD:
In a large mixing bowl, add the soft tofu, shredded carrots, ajwain seeds, red chilli powder, and salt. Mix well.
Now, add the wheat flour. Mix well and make a soft pliable dough. Use water only if needed.
Once the dough is ready, cover and keep aside for 15 minutes.
Take a small portion of the dough, flatten it and roll it into thin rotis using extra flour for dusting.
Cook the rotis on a wide-based skillet using ghee or oil.
Enjoy hot with raita/yogurt or pickle.
