Berrylicious Bread Pudding

Life was going too mechanical and tiring! As much as I wanted to update my blog, I somehow was not in my creative side of cooking. Each day, ended up in a routine ‘making-a-meal-because-I-have-to’ mode! And then, I took a break from the routine, made a fun rejuvenating trip with my girlfriends and here I am back to my calling – photography, cooking, and blogging!

A few days ago, I came across a very simple dish – Cinnamon toast! This dish is the inspiration for today’s recipe – Berrylicious Bread Pudding!

This is a dish loaded with the freshness of berries and a dash of  cinnamon on your slice of bread. This pudding can be your breakfast or dessert!

RECIPE:

Preparation Time: 10 minutes

Baking time: 20-25 minutes

Serves: 2 to 4 people

INGREDIENTS:

Mixed Berries – 1 Big cup

Ghee or butter – 3 tbsp + 1/2 tbsp (coating)

Raw Sugar (Brown Sugar) – 1/3 cup + 1/2 Tsp (coating)

Cinnamon Powder – 1 Tsp + 1/2 Tsp (Coating)

Baking powder – 1/2 tsp

Salt – a pinch

Bread Slices – 4

METHOD:

Preheat the oven to 400F.

In a bowl, melt the ghee and add  berries, cinnamon powder, raw sugar, baking powder, and salt. Mix well.

Take a bakeware, coat the bottom of the dish with ghee, cinnamon powder, and raw sugar.

Now, make 2 layers of bread and berry mix alternatively. The top layer being the berry mix.

Bake the pudding in the preheated oven for approximately 20 minutes or till done.

*The baking time may vary.

Once done, serve hot or warm or once it cools down! Either way, it tastes delicious 🙂
