Veg Pulao (Karnataka Style)

One pot flavored rice recipes are always my preferred choice of recipes because they are easy, mess-free and nutrition-packed dishes!

Most of my one-pot meals are Instant Pot recipes! I love the simplicity this gadget brings to my day-to-day cooking! Be it PIP (pot-in-pot) cooking, or steaming veggies or making idlis or preparing an entire meal with it! It is always a breeze 🙂

Today’s recipe is yet another variant of Vegetable Pulao! What is the difference you ask? This recipe has Karnataka flavors to it! A blend of spices with a dash of coconut makes it very light yet lip-smacking dish.

RECIPE:

Preparation Time: 15 minutes

Cooking time: 10 minutes (sauté time) + 20 minutes (cooking and pressure release time)

Serves: 4 people

INGREDIENTS:

  • Basmati or Sona masoori rice – 2 cups
  • Green Beans – 1/2 cup chopped
  • Carrots – 2 medium size – chopped
  • Onions – 1
  • Bell Pepper – 1
  • Tomatoes – 1
  • Cumin Seeds – 1 Tsp
  • Star Anise – 2
  • Bay Leaf – 1
  • Ghee – 2 Tsp
  • Oil – 2 Tbsp
  • Water – 2 cups

P.S: You can add other veggies like cauliflower, potatoes or fresh peas.

FOR THE MASALA PASTE:

  • Shredded coconut – 1/2 cup
  • Cumin seeds – 1 Tsp
  • Fennel Seeds – 1 Tsp
  • Green Chillies – 3 to 4
  • Ginger – 1 inch
  • Garlic – 2 cloves
  • Cloves – 4 to 5
  • Cinnamon – 1/2 inch stick
  • Coriander seeds – 1 Tsp
  • Poppy Seeds – 1 Tsp
  • Coriander leaves – 1/4 bunch or 8 to 10 strands
  • Water – 1/2 cup

METHOD:

Grind everything mentioned under the ‘For the masala paste’ section into a fine paste. Keep this aside.

Now, turn on the Instant pot in sauté (normal heat) mode.

Heat oil. And then add cumin seeds, Star Anise, and bay leaf.

Sauté till you can smell the aroma of these spices.

Once done, add chopped onions and fry them till translucent.

Now add chopped bell peppers and fry for few minutes.

Next, add the tomatoes and sauté till they are mushy.

After tomatoes, add the chopped veggies and mix thoroughly.

Now, add salt and the ground masala paste. Mix well and allow it to cook for 2-3 minutes.

Next, add the washed raw rice and 2 cups of water and mix well.

Turn OFF the sauté mode and close the lid making sure the vent is in the sealing position.

Hit the Manual / Pressure cook button on your instant pot. Adjust the timer to 7 minutes and cook. I did an NPR but you can either opt for Natural Pressure release(NPR) or quick release(QR).

Once done, garnish with coriander leaves and serve hot with cucumber-onion raita 🙂
