One pot dishes are my favorite kind to cook! I love the simplicity of these dishes.And with the inventions of electric pressure cookers, life in the kitchen has become much simpler. You don’t need to babysit and wait for the whistles to blow or keep a count on the number!
I am an avid Instant pot user, I would not mind being called ‘Obsessed’ when it comes to this toy in my kitchen! My traditional pressure cookers have been totally replaced by these and there isn’t a single day that goes by without putting my IP on use.
Here is yet another sumptuous one pot side dish that goes well with any Indian breads.

Preparation Time: 10 minutes
Cooking time: 10-12 minutes
Serves: 3 to 4
INGREDIENTS:
Cauliflower – 1 medium sized bunch
Onions – 1 small
Tomatoes – 1
Bell Pepper or capsicum – 1
Kitchen King masala – 1 tsp
Red chilli powder – 1 tsp
Salt – as per taste
Coriander leaves – for garnishing
Oil – 1 tbsp
For the Ground paste:
Shredded coconut – 1 cup
Onions – 1/2 of big or 1 small
Garlic – 1 clove
Cashews – 6 to 8
Peppercorns – 1/2 tsp
Cinnamon – 1/4 inch
Clove – 2 to 3
Cumin seeds – 1 tsp
METHOD:
Grind all the ingredients mentioned under the ‘for the ground paste’ section into a fine paste using 1/4 cup of water. Keep it aside.
Now, turn on your instant pot in SAUTÉ – normal mode. Heat oil.
Add cumin seeds. Sauté till done.
Now add the onions and fry till they are translucent.
Next, add the chopped tomatoes. Fry till mushy.
Add the chopped bell peppers and fry for couple of minutes.
Now, add the cauliflower florets and mix well.
Add the ground masala, kitchen king masala, red chilli powder and salt. Mix well.
Add 1/2 cup of water and mix well but gently.
Turn OFF the SAUTÉ mode. Close lid.
Cook on MANUAL or PRESSURE COOK mode for 0 MINUTES on HIGH PRESSURE – NPR (Natural Pressure release).
Once done, garnish with coriander leaves and serve hot with roti or phulka.
