Baked Eggplant Crisps

I am sure the title of the post caught your attention which is why you are here, reading this 🙂

Baked Eggplant Crisps – the recipe for this is as simple as its name – thinly sliced eggplant baked with your favorite spices until crisp to bite 😀

This can be served as an accompaniment with rice and rasam or as a snack with some ketchup / sauce/ salsa to dip and eat 🙂

So here is the recipe for the Eggplant Crisps:

INGREDIENTS:

Eggplant – 1 medium sized

Your favorite Spice powder + salt mix – 2 tsp

*i used a mix of red Chilli powder, cumin powder, turmeric powder and chaat masala 

Olive oil – ~2tsp

METHOD:

Preheat the oven to 350ºF, grease a baking tray with oil and keep it aside.

Meanwhile chop the eggplant into thin slices – round or semi circle. Make sure they are not very thick rounds else the eggplant might not turn crispy enough. Place the chopped eggplant pieces in cold water to prevent browning.

Just before mixing with spice powders, sieve and pat dry the eggplant pieces with a paper towel.

In a large bowl, add the chopped eggplants. Add in the oil and the spice powders.

Mix the eggplant with oil and spice powders well but gently.

Place the spice coated eggplants in a baking tray.

Bake for 20 minutes on 350F.

Reduce the temperature to 250.F and bake for another 20 minutes.

Each oven has varying temperature so keep an eye on the eggplant and adjust baking time accordingly.

Once done, allow it to cool down and then serve with some hot n sweet ketchup 🙂
