Coconut is an integral part of most Udupi recipes . The very reason for this is the abundance of coconuts in the coastal region 🙂
Today I present to you a recipe from the Coastal Karnataka cuisine – Rice N’ Coconut fritters / Kaayi Vade 🙂 My memories of this amazing dish goes back to the times when my Paternal grandparents used to visit us in Mysore and my grandma would always prepare this for us.
She would sit down on the floor and pat these fritters while my mom fried it to perfection. The aroma and the taste of these coconut fritters is simply unforgettable.
Without further delay, here comes the recipe for Kaayi Vade / Rice N’coconut fritters 🙂
INGREDIENTS:
Raw Rice (Sona masoori or Idli rice) – 1 cup
Shredded coconut (Fresh or frozen) – 1/2 cup
Puffed Rice / Murmura – 1 cup
Jeera / cumin seeds – 1 tsp
Green Chillies – 3
Salt – as per taste
Rice flour – 2 tbsp
Water – 1/4 cup
METHOD:
Soak the raw rice with enough water for about an hour.
Drain the rice and grind it together with coconut, puffed rice, green chillies, cumin seeds and salt.
Add just a little water while grinding. Making sure not to make the mix watery.
After grinding, add the rice flour to the ground mixture and mix well.
Heat oil in a deep bottomed frying pan. And on a plastic sheet, smear some oil and take a small ball of the ground mixture. Pat it gently to a round puris similar to the size of pani puris but a tad bit thicker, using just couple of your fingers.
Once the oil is heated, fry these fritters till golden brown.
Serve hot with some hot cup of tea 🙂
