Before coming to the United states, I was not even aware of the fact that there is a vegetable like Asparagus ! And trust me when I first saw them in the stores, I was least motivated to try it. But then, a close friend of mine influenced me into buying asparagus by mentioning about how nutritiously rich it is and its amazing flavour.
So over a period of time I tried a number of asparagus recipes and finally found a recipe that is perfect for the Indian palate.
It definitely satisfies our spice loving Indian palate and yet does not make you guilty of enjoying a snack 🙂 And the entire plate is finished in just few seconds.
In the below recipe I have used the most common spice powders but you can make changes as per your requirements and experiment with the flavors. Garlic highly compliments with the flavor of asparagus, but you can definitely omit if you do not like using the same.
So here is the recipe for ‘OVEN FRIED ASPARAGUS’ 🙂 Happy snacking!
INGREDIENTS:
Asparagus (Shatavari in sanskrit) – 15 to 18 pieces
Olive oil – 1 tbsp
Garlic – 1 clove
Red chilli powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Chaat masala – 1/4 tsp (optional)
Salt – as per taste
METHOD:
Wash and pat dry the asparagus.
Break them into halves, you can chop off a little at the end if it is hard (not the tapering needle like end).
Preheat the oven at 350°F.
In a oven safe dish, add the halved asparagus pieces, olive oil, all the spice powders, grated garlic and salt. Mix it well.
Bake for about 20-22 minutes, stirring every 10 minutes.
*You can bake for longer if you want them crunchier. We like it soft and perfectly cooked. so 20-22 minutes of baking turns out good for me.
