Asparagus is a spring vegetable rich in Vitamins, Protein, Calcium, and dietary fiber. This veggie is also low in saturated fat and cholesterol.
This vegetable is a must in my grocery list during spring. Our favorite dishes out of these are Oven Fried Asparagus and Asparagus dal 🙂
So today, I am sharing the recipe for Asparagus Dal. The flavour of the vegetable along with the goodness of the lentils is quite a combination.

Preparation Time: 10 minutes
Cooking time: 15 minutes (Pressure cook) + 15 minutes stove top
Serves: 3-4 people
INGREDIENTS:
Asparagus – 10 to 12 sticks
Toor Dal (Lentil) – 1 cup
Green Chillies – 2 to 3
Turmeric powder – 1/2 tsp
Cumin Seed powder – 1/2 tsp
Coriander Leaves – for garnishing
Salt – as per taste
For Tempering:
Ghee – 1 tbsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Curry Leaves – few
METHOD:
Pressure Cook the Dal and asparagus together with 2 cups water, turmeric and drop of ghee.
*Pressure cook like you always cook the dal. 1:2 water
In a wide bottomed saucepan, heat 1 tbsp of ghee.
Add mustard seeds, urad dal, and curry leaves. Sauté till the mustard seeds splutter.
Now add the cooked dal-asparagus and 1 cup water. Mix well.
Next add the turmeric powder, cumin seed powder, and salt.
Boil well for 5-8 minutes.
Garnish with coriander leaves before serving.
Serve hot with hot rice and papad. Enjoy!
