Winter this year is brutal on the Northeast coast of the United states. We currently are going through a winter cold blast. The dropping temperatures make you crave for hot and spicy food.
What else can comfort you better than a bowl of piping hot soup?
Here is yet another one-pot recipe – CREAM OF BROCCOLI!

Preparation Time: 10 minutes
Cooking time: 10-12 minutes
Serves: 3 to 4 people
INGREDIENTS:
Broccoli – 2 small crown or about a cup of florets
Onions – 2 small
Ginger – 1 inch
Garlic – 2 cloves
Whole cashews – 1/2 cup or more
Butter or Olive oil – 2 tbsp
Pepper powder – 1 Tsp
Salt – 1 tsp or as per taste
METHOD:
Turn ON the Instant Pot in SAUTÉ mode. Melt the butter.
Add chopped onions, ginger and garlic. Sauté till the onions are translucent.
Next add the broccoli florets, pepper powder, and salt. Mix well.
Add the whole cashews and 2 cups of water. Mix well.
Turn OFF the SAUTÉ mode. Close the lid and make sure the vent is in sealing position.
PRESSURE COOK (MANUAL) for 5 mins on HIGH-PRESSURE NPR (Natural Pressure Release).
Once the pressure valve is released, open the lid and blend the contents into fine pureé using an immersion blender. If needed, add water before blending.
You can boil the soup for 2-3 minutes on Sauté mode if needed.
Your bowl of hot and steamy soup is ready to be savored!
