Corn Mixture

Today’s recipe is yet another snack made for Diwali 🙂 Simple, mouthwatering and irresistibly delectable – Corn Chivda / Corn Mixture.

My memory of this munchie goes back to the summer holidays spent with my grandparents in Udupi. My grandparents  would stock up the kitchen racks with all kind of snacks, sweets, candies, and juices before the grandkids arrived. One among the tons of yummy snacks was the Corn Mixture.

The below corn mixture recipe has been a great hit with my friends and family. This crunchy, spicy snack along with a tinge of sweetness makes this a perfect snack with a cuppa coffee or tea.  Do give it a try!

RECIPE:

Preparation Time: 10 minutes

Cooking time: 10 minutes

INGREDIENTS:

Dry Corn Flakes – about 500 gms

Peanuts – 1 small cup

Roasted gram – 1 cup

Curry leaves – few

Red Chilli powder – 1 to 2 Tsp

Salt – 1 tsp or as per taste

Roasted gram + sugar powder – 2 tbsp

Oil – for frying

METHOD:

In a wide bottomed pan, heat 2-3 tbsp oil and fry the peanuts, curry leaves, and roasted gram together. Drain on a paper towel, keep it aside.

Heat oil in a deep bottomed pan on a medium flame and deep fry the dry corn poha or corn flakes.

Meanwhile, in a mixer add an equal proportion of roasted gram (putani or pottukadalai) and sugar. Blend into a fine powder.

Take a large mixing bowl, add the fried corn flakes, peanuts, curry leaves and roasted gram. Mix well but gently to make sure the flakes do not crush.

Next, sprinkle the red chilli powder through a strainer and mix well.

Now add the salt and the roasted gram + sugar powder. Mix.

Homemade corn mixture is ready to be gorged on 🙂
