Carrot Puris are typically made by either adding grated or pureed carrots to wheat flour. The recipe that I am sharing today is what I learnt from my Mother-in-Law.
I loved the fact that this method is a lot different than the usual recipes. In the below recipe, carrots are cooked in milk and then blended with wheat flour.
The sweetness of the carrots paired with spicy onion-coconut raita (video recipe mentioned in the end) makes this dish delectable 🙂

Preparation Time: 20 minutes
Cooking time: 20-25 mins
Makes: 30-40 puris
INGREDIENTS:
Carrots – 4
Milk – 1 cup
Ajwain – 1 tsp
Whole wheat flour – 3 cups (or as much as needed for the carrot and milk mixture)
Salt – as per taste
METHOD:
Pressure cook the carrots with 1 cup milk.
In a large mixing bowl, mash the pressure cooked carrot with milk. Mash coarsely.
Next, add the ajwain and salt. Mix well.
Add wheat flour at intervals and knead well to form a soft pliable dough.
Take small portions of the dough and roll it into puris using a press or a rolling pin.
Heat oil in a deep fried pan and fry the puris till golden brown.
Serve hot with Onion – Coconut Raita
