Here is yet another quick, one pot, loaded with nutrients – Lunchbox Recipe – Spinach Rice (Instant Pot Method).

Preparation Time: 10 minutes
Cooking Time: 12 + NPR time
Serves: 4 people
INGREDIENTS:
Basmati Rice – 2 cups
Spinach – 1 whole bowl
Onions – 1
Green Chillies – 2 to 3
Kitchen King Masala – 1 tsp
Lemon Juice – 1/2 lemon
Salt – as per taste
For Tempering:
Cumin Seeds – 1 tsp
Peppercorns – 1/2 tsp
Bay Leaf – 1
Ghee or Oil – 1 tbsp
METHOD:
Turn on the Instant Pot electric cooker on SAUTÉ mode.
Heat oil or ghee. Sauté the rest of the ingredients mentioned under the ‘for tempering’ section.
Add the onions and green chillies. Fry till the onions are translucent.
Add the washed and chopped spinach. Sautè for 3-4 minutes.
Next, add the washed basmati rice. Mix well.
Now add the kitchen king masala, salt, and lemon juice. Mix well before adding water.
Add 2 cups of water. Mix well, check for the salt.
Turn off the sauté mode and select RICE mode.
Cook in RICE mode and do a Natural Pressure Release.
Once done, serve hot with raita or pickle.
Delicious rice!
