Cheesy Dill Bites

 

Cheese Bites are delectable snack bites. My favorite among the lot has always been Mozzarella cheese. So whenever I get a chance to use this cheese, I jump to it!

Today’s recipe is a slight twist to the cheese bites! The addition of the aromatic dill leaves to these cheesy balls makes it all the more irresistible and flavorful 🙂

So here is my recipe for Cheesy Dill Bites!

Preparation Time: 10 minutes

Cooking Time: 10 minutes (to cook potato) + 20 minutes (to cook the cheesy bites)

Makes: 14-15 bites

INGREDIENTS:

Dill Leaves – 1/2 bunch

Potatoes – 3

Onions – 1 small or 1/2 of the big one – chopped finely

Pickled Jalapeño – 1 tbsp

Mozzarella Cheese – 1 cup

Italian Seasoning – 1/2 tsp

Salt – a pinch

Oil – for shallow frying

METHOD:

Boil and peel the potatoes.

In a mixing bowl, mash the potatoes well.

Add the chopped dill leaves, onions, and jalapeño. Mix well.

Next add the shredded cheese, Italian seasoning, and salt. Mix well to form a dough consistency mixture.

Tale small portions of the mixture, roll into balls and coat with bread crumbs.

Refrigerate for 30 minutes.

After refrigeration, heat the ebleskiver pan and smear oil.

Place the refrigerated cheese balls in each of the ebleskiver molds and cook until golden brown on all sides.

The bites should be crispy on the outside and cheesy on the inside.

Once done, serve hot with hot sauce as an evening snack 🙂
