Rava Idli is a very popular instant south Indian breakfast. This recipe can be made in a jiffy with a handful of ingredients. If you have a busy morning ahead, Rava Idli is your go to recipe.
Here is the recipe for instant Rava Idli 🙂

INGREDIENTS:
Fine Sooji – 2 cups
Buttermilk – 2 cups + ½ cup
Salt – as per taste
Baking soda – ¼ tsp
Asofoetida – a pinch
Grated carrot – 1
Coriander leaves – few – chopped finely
For tempering:
Cooking oil – 2 tsp
Mustard seeds – 1 tsp
Urad Dal – ½ tsp
Curry leaves – few
METHOD:
In a wide pan, heat oil, add mustard seeds and urad dal. Once they splutter add the curry leaves. Then add the rava and saute till the rava is roasted well.

Allow the rava to cool down, then add the grated carrots and chopped coriander leaves.
Add the baking soda and mix well.
Add 2 cups of buttermilk slowly and keep mixing.
Allow it to sit for 3-4 minutes.
The rava would soak some of the buttermilk, so add another ½ cup of buttermilk of water to make the batter to a idli batter consistency.

Pour the batter into the idli stand and steam for about 15 mins.
Serve the rava idlis with some hot sambar or chutney !
