Vangi Bath

Vangi bath or brinjal rice is a one pot meal – quick and easy ! My son loves flavored rice and this is one of the easiest, quickest and tastiest 🙂

INGREDIENTS:

Rice – 1 cup

Eggplant – 1 bowl – chopped

Onion – 1 – finely chopped

Green chillies – 2

Ginger – ¼ inch – chopped finely

Garlic – 1 clove – finely chopped

Salt – as per taste

To grind:

Grated coconut – ½ cup

Vangi bath powder – 3 tbsp (I use store bought)

Turmeric Powder – 1 tsp

Asofoetida – ¼ tsp

Tamarind paste – 2 tbsp

Salt – a little

To Garnish:

Crushed peanut – coarse or fine powder

Mint leaves – few

Coriander leaves – few

Method:

Cook rice, mix a tbsp of coconut oil and keep it aside.

In a wide bottomed pan, heat oil. Add mustard seeds and urad dal. Saute till done.

Now add the chopped green chillies, ginger, garlic and onions. Saute till onions are translucent. 

Add the chopped brinjal/ eggplant, sauté for a minute. 

Add the ground masala and mix well. 

Allow it to cook well and get into a paste like texture.

Taste the mixture and add any spice powders or salt if needed.

Add rice and mix gently.

Add the chopped coriander and mint leaves, mix.

Finally add the ground peanut powder and remove from heat.

Serve hot with raita 🙂
