Carrot Sandwich

Sometimes the simplest of the recipes are the tastiest. If you are in a mood for a light, tasty and simple evening snack, Carrot sandwich is a must try!

My mum used to prepare this sandwich for us as an after school snack and till date, this remains as one among my most favourite snack. It’s incredibly simple, requires very few ingredients and is definitely kid friendly 🙂

INGREDIENTS:

Carrots – 2 , shredded

Onions – 1, chopped finally

Cumin seeds / jeera – 1 tsp

Oil – 1 tbsp

SPICES:

Red Chilli powder – ½ tsp

Turmeric powder – ½ tsp

Salt

METHOD:

In a wide bottomed pan, heat oil. Add cumin seeds and sauté for a few minutes.

Add onions and fry till it becomes translucent. Now add the shredded carrots, mix well and sauté for few minutes.

Add the spices – red chilli powder, turmeric and salt as required.

Continue to Sauté the mixture until the carrots are cooked well. Garnish with chopped coriander leaves and keep it aside.

Take 2 bread slices.  Spread the carrot mixture on one bread and place the other on top of it. Toast on a flat bottomed pan with Butter / ghee till golden brown.

Serve hot with tomato ketchup or mint chutney and some chilled juice.
