Tikkis or cutlets or Croquettes is a very popular appetizer in Indian meal platter. There are numerous recipes out there for different versions of these delish dishes.
Tikkis or croquettes are nothing but a mix veggies dipped in breadcrumbs and shallow fried.
Today’s recipe is a basic Tikki but stuffed with some grated paneer 🙂

Preparation TIme: 15 minutes
Cooking Time: 45 minutes
Makes: About 12 pieces
INGREDIENTS:
Grated Paneer – for the filling – 12 oz pack
Green Beans – 10 to 15
Carrots – 1
Potatoes – 2
Cabbage – 1/2 of small
Frozen Peas – 1/2 cup
Garlic – 1 clove
Green Chillies – 3 to 4
Gram Flour – 1/2 cup
Turmeric Powder – 1/2 Tsp
Garam Masala – 1 Tsp
Breadcrumbs – 1 to 1.5 cups and more for coating
Oil – 2 tbsp + few drops for greasing the baking pans
Salt – to taste
METHOD:
In a wide pan, heat 1 tbsp of oil and add jeera/cumin seeds.
Once the cumin seeds splutter, add the green chillies and garlic. Sauté till done.
Next, add the chopped green beans and carrots. Sauté for few minutes making sure the veggies do not get cooked completely.
Next, add the green peas and cabbage. Mix well.
Add salt and turmeric powder. Mix well and sauté until the cabbage is half done.
Keep aside the veggies and let it cool.
Meanwhile, dry roast the gram flour in a separate pan. And Keep it aside.
Once the veggies are cooled, coarsely grind them in a mixer.
Now heat 1 tbsp oil in the wide bottomed pan, add the ground veggie mixture and fry till the raw smell goes away.
Now, take a large mixing bowl, add the ground mixture, boiled-peeled-mashed potatoes, roasted gram flour, and breadcrumbs. Mix well to blend all the ingredients together.
Keep the Tikki mix aside and grate the paneer needed for the filling.
Once done, take a small portion of the Tikki Mix, flatten it like how you do it for stuffed parathas and then add the grated paneer. Fold the sides and cover the paneer completely.
Flatten the Tikkis and coat them with breadcrumbs.
While preparing the Tikkis, preheat the oven to 400ºF and grease a baking tray or pan.
Once the Tikkis are stuffed, bake them for about 40 to 45 minutes in the oven or till done.
Serve hot with green chutney!
