Cheese-Spinach Paratha(Indian Flatbread)

Cooking for your little one is no easy task. The picky eaters, the fussy eaters, the tantrums, the sudden cravings! Sigh!The challenge of making them eat right gets harder as they grow.

My Son loves roti for dinner and prefers to eat it without the sabji. So, what’s my workaround for it? I usually mix the veggies in the dough and make it as exciting as possible.

The below recipe is my son’s favorite lunch box item. Sometimes I skip the cheese and pack just the spinach roti.  Either way, he loves it with ketchup and always finishes the box 🙂

Preparation time: 10-12 minutes

Cooking time: 5 minutes

Makes: 2 to 3 parathas

INGREDIENTS:

Spinach – one bunch

Yogurt – 1 Tbsp

Carom Seeds/Ajwain – 1 Tsp

Shredded Mozzarella Cheese – for filling

Wheat Flour – 3/4 to 1 cup

Salt – 1 tsp or as per taste

Oil – 1 Tsp

Ghee or oil – to spread on the paratha

METHOD:

Blanch/steam the spinach leaves until tender. Allow it to cool.

Once cool, pureé with yogurt and salt.

In a mixing bowl, add the pureéd spinach, ajwain, wheat flour, and oil.

Mix well and make a soft pliable dough using water at intervals if needed.

Now, take a lemon sized ball of the dough. Roll out halfway, stuff with the shredded cheese.

Dust with the all-purpose flour and roll out evenly like a paratha/roti.

Heat a skillet and smear with oil or ghee.

Cook the paratha on both sides till done.

Serve to your kids with ketchup and fruits on the sides!
