Deciding the meal menu for the day is a much strenuous task than preparing the meal itself! And if you have a school goer who is a picky eater then packing their lunch is yet another ordeal.
Sandwiches are typically a favorite among kids. It’s a good way to sneak in a lot of veggies into the daily intake.
Today’s recipe is one such dish which will be liked by not just kids but adults as well.
Here I present to you the Sweet Pepper Sandwich.

Preparation Time: 10-15 minutes
Cooking time: 5 minutes
Makes: 2-3 sandwiches
INGREDIENTS:
Chopped Onions – 1/4 cup
Chopped Tomatoes – 1/4 cup
Chopped Bell pepper – 1/4 cup
Chopped sweet peppers – all colors – 1/4 cup
Shredded mozzarella cheese – 1/3 cup
Tomato Ketchup – 1 to 2 tbsp
Oregano – 1/2 Tsp
Pepper powder – 1/4 tsp
Salt – 1/2 tsp or as per taste
METHOD:
In a mixing bowl, add the chopped veggies, mozzarella cheese, oregano, tomato ketchup, salt, and pepper. Mix well.
The above is the stuffing for your sandwich.
Now, take 2 bread slices.
Fill the above stuffing and toast on a tava (or sandwich maker) on both sides until golden brown.
Serve this colorful nutrition filled sandwich to your kids as a snack or lunchbox meal to school!
