One pot meals are my favourite. It’s easy, fast and extremely nutritious. It’s perfect for days when you are pressed for time. My instant pot makes it all the more easy to make one pot meals.
Today’s recipe is with QUINOA – the super healthy nutritious grain 🙂
If you are someone who does not like quinoa or Indian flavors with it, then this is one recipe that needs a try 🙂
Presenting to you – MIX VEG QUINOA as a one pot meal in the Instant Pot!

Preparation Time: 15 minutes
Cooking Time: 30 minutes (including the pressure release time)
Serves: 2-3 people
INGREDIENTS:
Quinoa – 1 cup
Tomatoes – 1
Onions – 1
Mix Veggies – 1 cup (You can use veggies like beans, carrots, peas, corn, cauliflower)
Garam Masala powder – 1 tsp
Fresh ground spice powder – 1 tsp
Red Chilli Powder – 1 tsp
Salt – 1 tsp or adjust per taste
Olive Oil – 1 tbsp
Water – 1.5 cups
For the masala powder:
Cumin seeds – 1 tsp
Fennel seeds – 1 tsp
Peppercorns – 1/2 Tsp
Cloves – 3 to 4
Star Anise – 1
Cinnamon – 1/2 inch
Bay Leaf – 1
METHOD:
In a wide bottomed pan, dry roast the ingredients mentioned under the ‘For the masala powder’ section on a medium flame.
Allow it to cool. Grind into a fine powder.
Turn your Instant pot – ON sauté mode (Normal).
Heat oil and add cumin seeds. Fry till the seeds splutter.
Add the chopped tomatoes. Fry till the tomatoes are mushy.
Then add the other veggies, mix well.
Now, add the spice powders – Fresh ground powder, garam masala, red chilli powder and salt.
Next, add the quinoa and water. Mix well.
Turn OFF SAUTÉ mode of your instant pot. Close the lid, make sure the vent is in the sealing position.
Turn ON the instant pot in MANUAL mode. Cook for 8 MINUTES.
MANUAL – 8 MINUTES – NATURAL PLEASURE RELEASE (NPR).
Once done, garnish with caramelized onions (Onions fried in ghee).
