Cucumber Rotti

Akki rotti is a staple breakfast recipe from the Karnataka Cuisine. The common recipe is where you add onions or dill leaves to the rice flour, but today’s recipe is something different that I learnt through a college friend.

RECIPE:

Preparation Time: 20 minutes

Cooking Time: 15-20 minutes

Serves: Makes 10-12 rottis

INGREDIENTS:

  • Rice Flour – 2 cups
  • All Purpose Flour/Maida – 1 tbsp
  • Curd – 1 tbsp
  • Shredded Cucumber – 1 bowl
  • Coriander Leaves – few
  • Cumin Seeds – 1 tsp
  • Salt – as per taste

METHOD:

Grate the cucumber, squeeze out the water and keep it aside.

In a large mixing bowl, add 2 cups of rice flour, all purpose flour, curd, shredded cucumber, coriander leaves, cumin seeds and salt. Mix well.

Make a soft pliable dough by adding water at intervals.

Take a small portion of the dough, smear oil on the aluminum foil and pat the dough thin.

Heat a tawa or the griddle, coat with oil. Place the rotti with the foil upside.

Cook for 3-4 minutes, and remove the foil. Flip on the other side.

Cook on both sides till done.

Serve hot with chutney or Sabzi.  Enjoy !
