Aloo Capsicum Fry

Potatoes are delectable when cooked with right Indian spices.  Be it a simple potato fry or potato gravy or masala for the dosa or aloo parathas, potatoes are always delicious 🙂

Below recipe is a simple Aloo – capsicum stir fry with cumin seeds. A simple but tasty dish that is perfect for Roti/Chapati

Preparation Time: 10 minutes

Cooking time: 20 minutes

Serves: 3 people

INGREDIENTS:

  • Potatoes – 5 to 6
  • Bell pepper/capsicum – 2 big ones
  • Green Chillies – 2 to 3
  • curry leaves – few
  • Cumin Seeds/Jeera – 1 tbsp
  • Oil – 2 tbsp
  • Salt – as per taste
  • Coriander leaves – for garnishing

METHOD:

Boil, Peel and Cube the potatoes. Keep them aside.

In a wide pan, heat the oil.

Add the cumin seeds and sauté till done.

Next add the chopped green chillies, curry leaves and cubed bell peppers.

Mix well and sauté for 2-3 minutes.

Next, add the cubed potatoes, mix well but gently.

Add salt and mix again. Cover and cook for 5-8 minutes or till done.

If you like the bell peppers half cooked or crunchy, then reduce the cooking time.

Once done, garnish with chopped coriander leaves.

Serve hot with roti or chapati or Rice and Rasam.  Enjoy!
