Tomato Rasa (Curry)

For most of the side dishes that go well with roti or chapati, tomatoes are a must!

This recipe that I am sharing today is the one I learnt from my Mom in Law. It is a simple, quick and tasty side dish for Roti/Chapati. Very handy for those busy days 🙂

Preparation time: 10 minutes

Cooking time: 15 minutes

Serves: 3-4 people

INGREDIENTS:

Tomatoes – 4 – chopped finely

Peanuts – 1 cup

Sesame Seeds(white) – 1/2 cup

Red chilli powder (or dry red chillies) – 2-3 tsp

Jaggery – 1.5 tsp

Coriander leaves – for garnishing

Water – 1 to 1.5 cups

Salt – to taste

For tempering:

Oil – 1 tbsp

Mustard Seeds – 1 tsp

Urad Dal – 1 tsp

Asafoetida – 1/2 tsp

Curry leaves – few

METHOD:

In a wide bottomed pan, dry roast the peanuts and sesame seeds separately.

Grind the peanuts, sesame seeds and red chilli powder in a mixer. You can remove the skin of the peanuts or grind it together. I prefer to keep the skin since it is high in fibre.

*If using dry red chillies, dry roast them too. This ground paste can be stored in the refrigerator.

Now in a deep bottomed pan/Kadai, heat 1 tbsp oil and add the ingredients mentioned under the ‘For tempering’ section.

Now, add the chopped tomatoes, water, jaggery, salt and the ground mixture. Mix well and allow to boil for 10-15 minutes. You can add more water to adjust the consistency required.

Once done, garnish with coriander leaves and serve hot with roti / chapati.
