On a cold winter day, nothing warms you up like a bowl of piping hot soup. Soups have become more frequent in my Kitchen now…..thanks to the wonder appliance – Instant Pot 🙂
One among the list of favorite soups is the Lemon Coriander Soup. You need very few ingredients to make this soup, but the warmth and flavor are beyond amazing!
You can make this soup even on a stovetop by just boiling it for 10-15 minutes.

Preparation time: 10 mins
Cooking time: 15 minutes + ~10 minutes (pressure release time)
Serves: 3-4 people
INGREDIENTS:
Onions – 1 – chopped finely
Garlic – 2 cloves – chopped finely
Cabbage – 1 cup – chopped finely
Carrots – 1 – chopped into cubes
Lemon – 1
Coriander Leaves – 1/4 bunch – chopped finely
Pepper powder – 1 tsp
corn flour – 1 tsp – mixed with 1/4 cup water
Butter – 1 tbsp
Salt – as per taste
Water – 3 cups
METHOD:
Turn the Instant pot on in ‘sauté’ mode.
Melt 1 tbsp of butter. Add the chopped onions and garlic. Sauté till onions are translucent.
Add the pepper powder and mix well.
Now add the chopped cabbage and carrots. Mix well.
Next, add the corn flour paste , lemon juice and a required amount of salt. Mix well and sauté for few minutes.
Add 3 cups of water or vegetable broth and mix well.
Turn off the instant pot, close lid and select the ‘Soup’ mode and select the cooking time to 15 minutes.
**Cook in SOUP mode – 15 mins – Natural Pressure release.
Once done, add a generous quantity of chopped coriander leaves just before serving because the leaves turn black since the soup is hot.
Would rice flour work?

I think all purpose flour would be a better alternative to corn flour.
