Uppu Huli Dosa is a very popular dish from the Udupi cuisine made from rice and loaded with delightful flavors of spices and enhanced with the goodness of veggies.
I learnt this recipe from my mom and loved the fact that everybody in my house relishes this dosa with utmost joy 🙂
Today I present the recipe for Uppu Huli dosa with Heerekai / ridge guard. You can replace ridge guard with shredded cabbage / chopped spinach leaves/ fenugreek leaves.
INGREDIENTS:
Rice – 3 cups (Combination of dosa rice and sona masoori/basmati in 1:1 ratio)
Puffed rice – 1 cup
Ridge Gaurd or Heerekai – 1 – peeled and chopped into round slices
To grind:
Shredded coconut – 1/2 cup or one-half of the whole coconut (NOT IN THE PIC)
Jaggery – one lemon sized ball
Tamarind – 1/2 lemon sized ball
*if using tamarind paste – 3 tbsp of paste
Coriander seeds – 1/2 cup
Cumin seeds – 1/4 cup
Dry Red chillies – 5 to 6
Asafoetida – 1/2 tsp
Salt as per taste
METHOD:
Soak rice in water for 2-3 hours. Also, soak the tamarind in a small cup of water. If using tamarind paste, skip this step.
Soften the puffed rice / murmura by sprinkling half cup of water. Keep it aside.
Meanwhile, prepare the masala. In a pan, dry roast the coriander seeds, cumin seeds and dry red chillies.
Once cooled, grind into a fine powder in a mixer.
Now squeeze the tamarind water from the soaked tamarind, add this to the ground powder along with grated jaggery and shredded coconut.
Grind into fine paste by adding water if needed.
Now lets proceed to prepare the dosa batter. In a wet grinder / mixer / food processor, add enough water, soaked rice, ground mixture and puffed rice.
Grind well till the batter is bit grainy in texture, it need not be completely smooth textured.
Once done, add salt and asafoetida. Mix well. At this point check for the spice level and tamarind flavor, if need you can add red chilli powder and tamarind paste.
The batter is now ready to be used.
Dip the sliced ridge guard in the batter and place it on the heated tawa/pan next to each other forming a round shaped dosa.
Cook well on both sides by adding ghee / butter while doing so.
Flavor filled Uppu Huli dosa / heerekai dosa / red dosa / Ridge Gaurd dosa is ready to be served.
Serve hot with some curd or chutney powder or coconut chutney or just with a dollop of butter.
