Mango season is just around the corner. The sight of those sour green mangoes is quite a motivator to cook up a nice raw mango dish. Today’s recipe is a simple and easy to make dish that brings out the best of raw mango flavors.
Here is the recipe for Mango Rice / Mavinkaayi chitranna (in Kannada) :
INGREDIENTS:
Rice – 1 cup (uncooked)
Raw Mango – 1/2 of big one or 1 small one – grated
Green chillies – 2 – slit vertically
Turmeric powder – 1/2 tsp
Asafoetida – 1/4 tsp
Salt – to taste
For tempering:
Oil – 3 tbsp
Mustard seeds – 1 tsp
Urad dal – 1/2 tsp
Peanuts / groundnuts – handful
Curry leaves – few
Coriander leaves – for garnishing
METHOD:
Wash and cook the rice. Once done, spread it on a plate and mix 1/2 tsp of coconut oil. This will ensure that the rice does not stick to each other.
In a frying pan, heat oil. Then add mustard seeds and urad dal to it. Saute till the urad dal turns golden brown and mustard seeds splutter.
Now add the peanuts and sauté till they are roasted well.
Then add the green chillies and curry leaves. Sauté for 2-3 minutes.
Once done, add the grated mango (you can also add a few finely chopped mango pieces), turmeric powder, asafoetida and salt. Mix well.
Cook the above for about 5-7 minutes.
Turn off heat and then mix rice well but gently making sure it does not break.
Garnish with some chopped coriander leaves.
Serve hot with pickle or papad 🙂 Or enjoy this tangy rice as it is 🙂
