Time for some dessert after a wonderful fortnight of Chaats.
Komola Kheer is a bengali sweet dish made out of whole milk and oranges.

INGREDIENTS :
Whole Milk – 2.4 litres
Granulated Sugar – 10 Tbsp
Cardamom powder – 1 tsp
Juicy sweet Oranges – 5 to 6 (peeled and segmented)
Saffron – 1 tsp
Pistachio nuts – 3 tbsp, chopped for garnishing

METHOD:
Boil the milk in a thick bottomed pot on high flame.
Now reduce the flame to medium and thicken the milk until the milk changes its color to nice shade of cream.
This process will take about 1 hour 15 minutes. The milk should be reduced to a little less than half the original quantity.
Add the sugar, cardamom powder and saffron strands, lower the flame and cook for 5 minutes more.
Cool to room temperature and add the orange segments.
Chill overnight and serve garnished with pistachios.
