Don’t you just love coming back home to a room full of aroma? Don’t you just love the sight of a nice hot evening snack?
Cutlets are a big part of Indian snacks. It has a mash of veggies, a dash of spice and of course some amazing flavours.
I tried making this snack with a teeny tiny difference. I made cutlets with sprouted moth beans and peanuts.

INGREDIENTS:
Sprouted moth beans – 2 cups
Peanuts / groundnuts – 1 cup
Carrot – 1
potato – 2
Green chillies – 3
coriander leaves
Red chilli powder – ½ tsp
Turmeric powder – ½ tsp
Cumin Powder – ½ tsp
Fennel Powder – 1 tsp’
Lemon Juice of ½ lemon
Rice Flour – 2 tbsp
Salt – to taste
For the coating:
Corn flour – 2 tbsp
Rava/ Sooji – ½ cup
Method :
Pressure cook the sprouted Moth beans, potato and carrot for 2-3 whistles. Allow it to cool and churn it in a mixer for a coarse mix. Add the spice powders – chilli powder, turmeric powder, cumin powder, fennel powder and salt. Mix well. To this mixture add the rice flour and lemon juice. Give it a nice mix.

Make small cutlet patties and keep it aside.

Prepare the corn flour batter by adding enough water to the corn flour. Make sure the batter is not too watery nor too thick. Keep the sooji / rava ready in the plate. You can also use bread crumbs instead of the rava.

In a wide bottomed skillet, heat 1-2 tbsp oil for shallow frying the cutlets.

Fry them till golden brown.

serve hot with green chutney and sweet chutney or with some ketchup ! It tastes best with a hot cup of desi chai 🙂
