Spiced Baby potatoes

We are aware of the fact that potatoes are rich in nutrients, starch, and anti-oxidants. These commonly available root veggies improve blood sugar control, digestive health and they are also naturally gluten-free 🙂

The below recipe uses baby potatoes that are widely available in most of the grocery outlets. But if you do not have them handy, you can use the normal potatoes.

These flavored baby potatoes are spiced well with Ginger and cumin seeds. The zesty and warm flavor of the ginger blends in beautifully with that of the humble potatoes.

Ginger flavored Baby potatoes

Recipe:

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Serves: 3 – 4 people

Ingredients:

  • Baby Potatoes – 1 to 1.5 lb – washed and peeled
  • Ginger – 2 inch – grated
  • Green chillies – 2 to 3 – chopped
  • Cumin Seeds – 2 tbsp
  • Turmeric powder – 1/2 tsp
  • Asafoetida – 1 pinch
  • Salt – 1 tsp or as per taste
  • Oil – 2 Tbsp

Method:

In a wide bottomed skillet, heat the oil.

Heat oil and sauté cumin seeds.

Add cumin seeds and sauté till done.

Next, add a pinch of asafetida. Sauté well.

Then, add the chopped green chillies and grated ginger. Sauté for 1 minute.

Now, add the washed and peeled baby potatoes. Mix well, making sure the cumin seeds are coated well into the potatoes.

Next, add the salt and turmeric powder. Mix well.

Cover and cook on medium flame till the potatoes are well done. This should take anywhere between 15 to 20 minutes.

Cover and cook.

Serve hot with roti or rice and rasam or phulka.
