Cranberry Cookies

Here is an easy to make, no eggs, no butter recipe- Dried cranberry cookies 🙂

Baking is comforting and home baked cookies are absolutely heavenly.

Cranberry cookies – Crunchy and chewy with every bite 🙂

Preparation and Baking Time: 30 Mins

Makes: 15 Cookies (May vary depending on the size of the cookies)

INGREDIENTS:

All Purpose Flour – 1 1/2 cups

Baking Powder – 1 tsp

Baking Soda – ½ tsp

Dried Cranberries – ¾ cup

Olive Oil / cooking oil – ½ cup

Sugar – ¾ cup

Salt – a pinch

METHOD:

Preheat the oven at 350°F. Line the baking tray with parchment paper (Optional).

In a deep bowl, add oil and sugar. Beat well till it looks creamy.

Add the cranberries and mix well.

Now add the dry ingredients – all purpose flour, baking soda, baking powder and salt.

Mix well till a smooth dough is formed.

Roll out the dough and cut them into your favorite cookie shapes. Place them on the cookie tray.

Bake for 10 minutes or till golden brown. They are are done when they appear firm with a gentle touch. You can bake the cookies longer if you want them to be crispy.

Cool them on a wire rack before serving.

Serve with some hot cocoa or cold milk. Store in an air tight container.
