I love experimenting with food. Improvising a recipe gives me great excitement. Mixed vegetable roti is one among those experimental recipes that I came up with while trying out variations to the normal roti.
As mentioned in my earlier post, my four-year old is not just an observant eater but he is also pretty particular and keen about what goes into his meal. He loves vegetables but prefers eating them only with rice. He loves chapati/phulka and enjoys it the best with just sugar. This is when it struck me that I could make rotis/chapati more interesting to him simply by adding vegetables into the dough 🙂

INGREDIENTS:
Mix Veggies – 1 cup (steam cooked/pressure cooked) – I have used green beans, carrots, sweet corn and peas.
Spinach / Palak – A handful (steam cook)
Mint leaves – few
Coriander leaves – a handful
Grated Paneer – one small cup
Green Chilli – as per spice level needed
Turmeric Powder – 1/2 tsp
Lemon – 1/2
Jeera – 1 tsp
Fennel Seeds / Saunf – 1 tsp
Ajwain / Carom Seeds – 1 tsp
Salt – as per taste

METHOD:
Steam cook / pressure cook the vegetables and spinach. I used my electric rice cooker for cooking the vegetables but you can also pressure cook.

Once cooked, grind the veggies along with mint leaves, coriander leaves, green chillies, turmeric and half lemon juice. Make it into a fine paste

Meanwhile, in a mixing bowl, add the grated paneer , the ground mixture, jeera, fennel seeds and ajwain.



Mix this well well. Now add wheat flour to the mixture as per requirement. Knead the dough well so that the mixture completely blends with the dough. Keep it covered for sometime.


Roll the dough into thin phulkas and cook them on medium Flame.
Serve hot with a side dish of your choice or with curd and pickle.
