Pilaf is a light but flavorful dish made with rice and whole spices.When Rice is cooked with the whole spices like star anise and bay leaf, it has a distinct aroma that’s hard to resist.
The simplicity of this dish is furthermore increased since it is a One-Pot-One-Shot meal (OPOS).
Here is yet another Instant Pot recipe from ‘Food-Filment’ kitchen.

Preparation time: 10 minutes
Cooking time: 20 minutes (including the natural pressure release time)
Serves: 3 people
INGREDIENTS:
Mix veggies – 1 cup (I used green beans and carrots)
Onions – 1 – chopped lengthwise
Green Chillies – 2 – slit lengthwise
Coriander Leaves – few – chopped finely
Basmati Rice – 1 cup
Water – 1 1/4 cup
Salt – as per taste
For Tempering:
Cumin Seeds – 1 tsp
Peppercorns – 1/2 tsp
Fennel Seeds – 1 tsp
Star Anise – 2
Cloves – 5 to 6
Cinnamon – 1 inch
Bay leaf – 2
Ghee – 1 tbsp
METHOD:
Turn on the Instant Pot on ‘Sauté’ mode.
Heat Ghee and add the whole spices mentioned under the ‘For tempering’ section. Sauté till you get the aroma of the spices.
Next, add the chopped mix veggies and green chillies. Mix well.
Now add the washed rice, salt and 1 1/4 cup of water. Mix well.
Turn ‘OFF’ the Instant Pot. Close lid. Make sure the vent is in ‘sealing’ position.
Turn ‘ON’ the instant pot in ‘MANUAL’ and set the cook time to ‘5’ minutes. Then do a Natural Pressure Release (NPR).
Meanwhile, prepare the caramelized onions by sautéing the onions in ghee till they are golden brown and translucent.
Once the rice is cooked, garnish with the caramelized onions and coriander leaves.
Serve hot with raita, papad, and pickle. Enjoy !
