Leafy veggies are one of my favorites. It’s quite easy to include them in day to day cooking. My favorites are spinach, fenugreek leaves, kale, collard and chard. I generally use them to make green juices, green dal or mix with the roti.
This time when I bought the mixed power greens pack (Kale, chard and Spinach), I decided to use them in a much more appetizing dish. That’s how today’s dish was created – The Power Greens Kebab – A perfect blend of nutrients, spices and flavor 🙂

Preparation time: 30 minutes
Cooking time: 15 minutes
Makes: 14-15 kebabs
INGREDIENTS:
- Mixed Greens (Spinach, Kale and Chard) – 1 big bowl/bunch
- *I use the store bought mixed greens pack
- Potatoes – 2 to 3 – boiled and peeled
- Green peas (fresh or frozen) – 1 small bowl
- Green Chillies – 2 to 3
- Ginger – 1 inch
- Garlic – 2 to 3 cloves
- Garam Masala – 1 tsp
- Chaat Masala – 1/2 tsp
- Gram flour – 3 tbsp
- Rice Flour – 1 tbsp
- Oil – for shallow frying
- Salt – as per taste
METHOD:
Pressure cook the potatoes and peas. Peel the potatoes and keep them aside.
Blanch the greens, run in cold water and drain completely. Chop them roughly and keep it aside.
Meanwhile, grind the green chillies, garlic and ginger into fine paste. Keep it aside.
Dry roast the gram flour on stove top or microwave.
**For Microwave – Microwave on high power for 1 minute and 20 seconds making sure to give it a stir after 30-40 seconds.
In a large mixing bowl, add the potatoes, peas and blanched greens. Mash them well.
Now add the green chilli paste, spice powders, gram flour, rice flour and salt. Mix well to make a soft pliable dough.
Take small portions of the mixture and make patties.
In a large skillet, shallow fry the patties on both sides till golden brown.
Healthy, hot and spicy kebabs are ready to be devoured 🙂
Serve hot with mint-coriander chutney and hot ketchup!
