‘Maddur Vada’ always reminds me of our drive to Mysore from Bangalore every month to visit my parents! There are a ton of restaurants and eat outs on the highway, and one of my favorites was the famous ‘Maddur Vada’ in a place called Maddur 🙂
This mouthwatering snack is crispy from the outside and soft on the inside. This dish is typically deep fried but to make it a little healthy I prefer to bake them 🙂
The texture is a bit different, but the taste isn’t compromised 🙂 In fact, since it’s baked you can store it for couple of days as well 🙂
So here is my recipe for Oven Baked Maddur Vada 🙂

Preparation time: 15 minutes
Dough resting time: 15 minutes
Baking time: 30 minutes
Yields: Around 20 pieces (depends on the size too)
INGREDIENTS:
All Purpose Flour / Maida – 1 cup
Rice Flour – 1/2 cup
Sooji / Rava – 1/2 cup
Roasted peanuts coarse powder – 1/2 cup
Onions – 1 – chopped finely
Green chillies – 3 to 4
Ginger – 1/2 inch
Curry leaves – few – chopped finely
Baking soda – a pinch
Asafoetida – 1/2 tsp
Turmeric – 1/2 tsp
Salt – as per taste
Hot oil – 1 tbsp
water – about 1/2 cup
METHOD:
In a large mixing bowl, add all the ingredients mentioned in the above list except water.
Mix well.
Add small quantities of water at intervals and make a soft, pliable dough.
Cover the dough and allow it to rest for about 15 minutes.
Preheat the oven to 400ºF.
Line a baking tray with parchment paper/baking sheet.
Take a small portion of the dough and roll into small rounds of medium thin roti shaped vadas. You can do this using a roti pressing tool as well. (Check the video for details)
Bake until golden brown. This took me about 30 minutes of baking time. Bake longer if you prefer a crispy vada.
Once done, allow the maddur vadas to cool.
Serve as a snack with a hot cup of coffee or chai 🙂
