Honey Cake

Valentine’s day is just around the corner. Planning to surprise your loved with something special? How about some egg-less Milk n ‘HONEY’ cake for your honey? 😉

This cake is a result of nostalgia and missing home… You ask me why? This cake is a replica of the honey infused cakes that we get in bakeries, most popular in Bengaluru and Mysuru region.

The below cake is easy to make, egg-less, no butter yet moist and melt in the mouth delicacy. The base cake is made of whole milk highly influenced by the tres leches cake recipe which is one of my favorite cakes.

So, here you go – the bakery styled HONEY CAKE. All you folks from namma Mysuru and Bengaluru – I am sure this recipe will make you want to go back to your Iyengar bakery 🙂

INGREDIENTS:

All Purpose Flour – 1 cup

Baking powder – 1/2 tsp

Baking soda – 1/4 tsp

Salt – a pinch

Sugar – 1/2 cup

Whole Milk – 1/2 cup

Oil – 1/2 cup

Vanilla essence – 1/4 tsp

For the Syrup:

Water – 1/2 cup

Sugar ( brown sugar or cane sugar) – 1/4 cup

Honey – 3 tbsp

METHOD:

Preheat the oven at 350°F, grease a baking pan and dust some flour on it. Keep it aside.

In a small bowl, add the oil, sugar and vanilla essence. Mix them well till a creamy texture.

Now add the whole milk, mix till the milk blends well with the rest of the ingredients.

In a larger bowl, sieve the flour, baking powder, baking soda and salt.

Add the wet ingredients to the dry ingredients and fold gently.

Pour the cake mixture to the greased pan, gently tap to release air bubbles.

Bake for 25-30 minutes. Keep checking every 10 minutes and insert a skewer or a toothpick to check if the cake is done. The tool you insert needs to come out clean.

Meanwhile when the cake is being baked, you can prepare the honey-sugar syrup.

Boil the 1/2 cup water and add the sugar. Boil it only till the sugar dissolves completely.

Turn off heat, allow the water to get down to warm and then mix in the honey.

Now your honey-sugar syrup is ready.

Once the cake is done, remove from the oven, allow it to cool down a bit.

Prick some holes around the cake using a fork or skewer. Pour the syrup around the cake so the cake is infused with the honey syrup completely.

Sprinkle some desiccated coconut on the cake and if needed you can pour another round of the honey syrup to it.

    1. Hey Akanksha, i live in an apt for rent and using the oven that is part of the kitchen appliances. The brand is whirlpool…it’s an old one though ! If you do not have an oven you can also try baking in a conventional microwave. Hope this helps!
